A Small Good in Rockport, Maine makes amazing charcuterie and fresh meat products from animals that come from local farms practicing the highest level of animal welfare. They use whole-animal butchering techniques, they are the only USDA facility in the U.S. making wild-fermented salumi, and they use koji for curing! Their meats are truly unique and very reflective of their terroir, with a flavor that is unlike any other charcuterie out there! 


The Basque-ish is a beef and pork salami cured with hard cider and hot pepper.
