The production of 100% sheep milk cheese is still pretty rare for American dairies, so finding one that is made in a long-aged Alpine style is even more special! Bear Hill is named for the scenic bluff that overlooks Grafton Village. These wheels are aged for 10-12 months during which time the rich, savory nuttiness of the sheep milk really develops. The salinity of this cheese would make it perfect for finishing off a salad or pasta, but it really shines as a table cheese paired with fruit, jam, honey or and a rich white wine!
