Made as traditional as it gets! This Coppa is made by trimming the meat of the shouder, seasoning with wine and heirloom spice mix. It is then cured and left to age. This lovely full muscle dry cure is made of Berkshire pork and takes on an earthy sweetness that is totally approachable and completely delicious.
