This is a semi-soft, washed rind cheese that really brings out the best characteristics of both milk types: Buttery sweetness from the cow's milk is balanced by a brightness and slight tang from the goat milk. These flat brick shaped wheels are lightly washed, creating a beautiful light-salmon colored rind that imparts a whisper of earthy, nutty funk. An entry-level washed rind that would be accessible for all palates!
