A new, personal sized (or two person) version of the multi-award winning cheese from Jasper Hill Farm. It's always the right time for Harbison, a cheesemonger favorite. Bloomy rinded wheels are wrapped in local spruce bark at the beginning of their almost two month aging period. This bark imparts an delicious array of flavor notes to the oozy paste, everything from brown mustard to asparagus to fresh lemon.
Pro tip: Warm your Harbison slightly in the oven and slice off the top rind layer, for a dip-able delight!
