Don't let the dark purple exterior fool you, this is no gimmick cheese, unlike almost every other cheese in "Ubriaco" style (wine soaked), this wheel from master cheese maker Beppino Occelli is like nothing you've ever tasted! The large wheels are coated with a Marc made from Barolo wine as they age for 3-4 months, giving the cheese a firm texture that retains it's moisture. At the end of aging, the wheels are densely packed with the Barolo grape must (pressed grapes). All this interaction with the wine gives these wheels a fantastically fruity flavor - the salty creamy flavors hit your palate first but then fade into a light grape-y sweetness. This is a star on your cheese plate but can be amazing in salads as well!
