At Caseificio Seggiano, they are dedicated to traditional methods and recipes. Named after the aging method, Pecorino Barricato is a sheep's milk cheese aged in barrels with walnut leaves. There is little oxygen in the barrels, allowing the flavor to envelope the cheese for a highly aromatic result.
