Somewhere between a starchy pear and an apple, quince have a unique floral aroma and flavor. Naturally very high in pectin, quince are often added to jams or fruit pies as a thickener and to enhance flavor. They are delicious on their own as well, these do require cooking before consumption. Cook these down with sugar and honey to make homemade membrillo, the Spanish quince jelly that is a classic pairing with hard, salty cheese.
