Cabbage Slaw with Avocado-Lime Dressing

Who says Cabbage can’t be summery? This is the perfect picnic salad! Cabbage offers up a crunchy bite, while the avocado gives you some velvety richness. This picnic slaw is sturdy enough that it won’t wilt into a soggy mess from the hot summer weather. Take it to the beach, take it to the park, or eat it in your own backyard alongside a burger. The dressing recipe makes enough for the slaw plus some extra for dipping some veggies or chips into later! 


Ingredients:


For the Avocado Lime dressing:


4 Avocados, pitted and scooped

4 Limes, juiced

1 T Burlap & Barrel Purple Stripe Garlic Powder

2 T EVOO

1 ½ T Kosher Salt



For the Cabbage Salad:


1 head Green Cabbage, quartered and sliced into ¼ inch thickness

1 large Yellow Onion, sliced ¼ inch thick

1 bunch Dill, chopped

Burlap & Barrel Black Lime, to taste

Maldon Salt

EVOO


Method:

Place avocado, lime juice, garlic powder, kosher salt and EVOO in a blender and blend on high until smooth. The mixture will be thick so you’ll need to stop and give it a stir and push down the sides with a rubber spatula a few times. Place sliced cabbage, onion, and chopped dill into a large mixing bowl and massage Avocado Lime Dressing into the slaw until cabbage is coated. Sprinkle some Maldon salt, a dusting of Black Lime and a drizzle of some EVOO over the salad to finish.
