Cold Brew Granita!
This is the perfect sweet treat on a warm day! Cafe Grumpy’s cold brew has such a deep, rich flavor that it doesn’t need much else to make this delicious. We almost tricked ourselves into thinking we accidentally dropped a little maple syrup into the bowl when we were mixing it. The key to making this granita nice and fluffy is not forgetting about it in the freezer. Once the liquid starts to freeze you want to make sure you are raking it every 30 minutes until you reach that light snowflake texture.
Ingredients:
2 cups Cafe Grumpy Cold Brew
¼ cup granulated sugar
Pinch of Cinnamon
1 cup heavy cream, whipped
1 piece 70% baking chocolate
Method:
Pour cold brew into a medium size bowl. Add sugar and cinnamon and whisk until sugar is dissolved. Pour mixture into an 8x8 baking dish (preferably metal since it will help the mixture freeze more quickly.) Using a large spoon, skim the layer of foam on the surface of the mixture and discard (or eat!) Place the dish on a level shelf in the freezer and set a timer for 90 minutes. When the 90 minutes is up, use a fork to rake the top and edges of the mixture then return the pan to the freezer. Repeat this process every 30 minutes for another 2 hours. Meanwhile, whip the cream in a bowl with a whisk until soft peaks form. When granita has reached a fluffy snowflake texture spoon some into a dish and top with a dollop of whipped cream. Using a microplane, grate the chocolate over the top of the whipped cream and enjoy!
