Shiitake (Fries)

These Shiitake Fries are so easy and fast, we make them for a snack anytime we are craving a crunchy treat, if done right you get a deeply flavorful mushroom french fry that is healthy and delicious, either on their own or as an addition to other dishes. This is barely a recipe, it is so easy, but, There is a secret trick - the quality of the Shiitakes, we use our Oak Log grown Shiitakes because they are big and plump and full of flavor, smaller shiitakes may work but they will be a little more leathery in texture.1/2 Lb - Oak Log Shiitakes

Here it is:

Peel the caps away from the stems of your shiitakes (save the stems in the freezer for mushroom stock!), then slice into 1/2 inch strips.  Heat a medium sauce pan with a thin layer of evoo until just before it is smoking, when you can smell the oil getting fragrant, it is probably ready.  Add your shiitakes (don't crowd the pan), and season with salt and pepper, let them get nice and brown before shaking the pan, after 3-5 min one side should be getting a dark golden color, once that happens shake the pan or flip with a spatula.  Continue to cook on the other side for another 3-5, then give a shake to the pan and cook until all sides look golden brown.  Scoop from the pan and dry on a paper towel or drying rack.  Crush maldon salt on top. Eat immediately, we dip them in garlicy herb aioli(their delicious), whatever we don't finish(which is usually nothing) we save to add to other dishes like the Crispy Eggplant w/ Marcona Almond. Enjoy!
