Producer Spotlight: Sequatchie Cove Creamery
Let's get to know American farmstead cheese! "Farmstead" refers to cheese that is made on the same land that the animals live on. An intimate knowledge of the animals that produce the milk for your cheese takes the craft of cheesemaking to whole different level, one that harkens back to the days before industrialized cheese and back to the days of the family-run farm.
Right now we carry three amazing cheeses from Sequatchie Cove Creamery, a family owned and operated creamery on the family's farm near the Cumberland Plateau, in south east Tennessee near Chattanooga. The Keener family have a lush and beautiful 300 acre diversified farm where they produce everything from organic and biodynamic produce, beef, pork, lamb, poultry, and at the creamery, they make beautiful European-style cheeses using raw cow’s milk from their 100% pasture-fed herd. Each cheese is a true expression of the lush grasses of the valley and a testament to what care and dedication to craft looks and tastes like. We’ve been lucky enough to work with Sequatchie Cove for a long time now and we’re even happier that we get to bring their beautiful cheeses into your homes! Cumberland - A natural rind tomme in the style of those made in the Savoie region of France. This gorgeous golden paste is supple and buttery--lush grass turned to pure gold.
Dancing Fern - This just might be the closest thing you can get to a true French Reblochon! Beneath a delicate washed rind is a supple buttery paste, with a hint of sprucy-ness.
Shakerag Blue - This showstopper blue is perfect for dessert when paired with a nice fortified wine or Scotch. Shakerag is wrapped in fig leaves that have been soaked in Chattanooga whiskey and has a dense buttery sweet paste.
