Cantabrian Anchovies - 55 g TIN


These are the most amazing anchovies from Spain, cured by L'Escala. They cure the anchovies under salt for 12-24 months depending on the fat content and size of the fish. Once they are finished the smell is sweet and the oily fats have been removed. They are then rinsed and cleaned by hand before being rested in sunflower oil.
