The French have Comte, and the Swiss havhase Gruyere. Selected by our master affineur for further aging, this Alpage Gruyere can only be made with summer milk when the cows are up in the mountains grazing on rich grasses and herbs. This premium milk is full of rich flavor which is then transcribed over to the cheese. Gruyere Alpage is dense and smooth in texture with a sweet nutty taste. This cheese is perfect for wintery dishes like gratins and fondue, or perfectly enjoyable paired along fruit and pickles.
