Pasteurized Sheep Milk, Italy
A unique wheel from Italian masters of sheep’s milk cheese, L’Antica Cascina. These cheeses are ripened in an amphorae filled with volcanic ash, giving the rind a dusty grey appearance and imparting an amazing clean limestone minerality to the rich flavor of the sheep milk. The stoney and earthy notes play well against the richness of the sheep milk to create a lovely balance in tastes on the palate. The texture is granular and perfect for shaving or snacking.
