Raw Cow Milk, France
This classic French cheese from the Jura Mountains is made by the Rivoire Jacquemin family, who have been making cheese for five generations. Working closely with local milk producers and using a combination of traditonal methods and modern technology, they hold each cheese to the highest standard. Whereas a young comte is bright and springy, Comte 30 month is matured to savory, earthy perfection. As it ages, the fresh and fruity notes of a young comte turn sharper and stronger. More brittle in texture, and dotted with crunchy crystals, extra mature Comte is great for finishing salads and adding depth of flavor to savory dishes.
