These tiny little onions grow wild in Puglia, where they are traditionally cooked with tomatoes, pancetta and topped with Pecorino as a side dish. But you can really use them anywhere, these little preserved onions would be amazing in a twist on a Gibson cocktail, for adding a little zip to your next pasta sauce or pizza topping, or part of a dynamic antipasto tray!
