Our Chef Collective "special recipe" Stracciatella was developed by us and is made by a small family of Pasta Filata Cheesemakers in New Haven, CT from pasteurized cow’s milk and cream.
Stracciatella is a combination of the little “rags” of cheese that are left over from mozzarella production and the richest heavy cream available. For our recipe, before the rags are mixed with the cream the cream is slightly cultured ensuring the most dynamic flavor possible. We worked with our cheesemakers to create a version of traditional Stracciatella that suited our customers, shorter pieces of mozzarella mixed with a richer cream and the perfect balance of sweet/salty to create the most decadent experience.
