Herbed Tahini Dressing
This rich, herby dressing is delicious on pretty much anything: a grated root vegetable salad, a head of little gem lettuce, or even on a bowl of noodles! Add some dried spices of your choice to jazz it up and add some more depth if you like!
Ingredients:
1 ½ cups basil leaves
1 ½ cups mint leaves
½ cup Soom tahini
½ cup warm water
1 clove garlic, grated
1 tsp kosher salt
Juice and zest of one lemon
Pinch of sugar
Method:
Finely chop both basil and mint leaves and set aside. Place the tahini in a medium bowl and slowly whisk in warm water. (It will seize up but continue to whisk and add more water. It will smooth out.) Add chopped herbs, salt, sugar, lemon juice and zest. Fold everything together until incorporated and taste for seasoning.
