Summer Corn Salad!
This is an easy salad to throw together that showcases the deliciousness of great summer produce! It makes you feel like you’re at a backyard BBQ, even if you’re eating it in the comfort of your own home. The corn was so sweet this week we didn’t bother cooking it, but this will be just as delicious if you prefer the taste and texture of cooked kernels. This salad can also be jazzed up with some herbs or fresh chilis if you have them on hand!
Ingredients:
4 Ears Corn, shucked
1 large Spring Onion, white and green parts, sliced thin
1 pint Cherry Tomatoes, sliced into quarters
1 Lime, juiced
3 T Mayonnaise
3 T Creme Fraiche
Kosher Salt
Black Pepper
Fresh Herbs (optional - basil, mint, parsley, dill would all be great here!)
Thinly sliced chili (optional)
Method:
Holding corn on its side, carefully slice kernels off of the cob and place in a large bowl. Add spring onion and cherry tomatoes to the bowl with the corn. In a separate small bowl, mix the mayonnaise, creme fraiche and lime juice until combined. Season corn mixture with salt and black pepper and fold in dressing until incorporated. If adding fresh herbs, fold them through right before serving.
