The Easiest Strawberry Shortcake

An ultra simple, quick and delicious take on a classic dessert. Perfect for that summer BBQ or a backyard picnic. Don’t get too fussy with the assembly, it’s going to look like a beautiful fun mess once you dig into it! 

(Makes 2 decadent desserts or 4 lighter ones)


Ingredients:


2 pints Strawberries, hulled and sliced

2 T sugar

2 packages The Good Batch Brown Butter Salty Cookies (4 cookies)

1 cup Mascarpone

Zest of 1 Meyer Lemon (optional)

Maldon Salt, optional


Method:

Combine the strawberries and sugar in a small mixing bowl. Let strawberries macerate in the fridge for at least one hour before using. Meanwhile, in a small bowl, whip the mascarpone and the Meyer Lemon zest with a whisk until smooth and the mascarpone has loosened up. Store the whipped mascarpone in the fridge until ready to use. When it’s time to assemble, spoon a tablespoon of mascarpone on the bottom of the plate and adhere one cookie to it. Spoon another layer of mascarpone followed by the strawberries, then top with another cookie. Add another layer of mascarpone and strawberries, then finish with the Maldon salt (if you’re using). Repeat this process for the second shortcake. (For a lighter dessert, use 1 cookie per plate)
