A beautiful collaboration between the Cabot Creamery Co-op and Cellars at Jasper Hill produces this world class cheddar. It is cloth bound in the English style which promotes the earthy, savory notes balanced by a pleasing sharpness and a hint of butterscotch finish. Aged about 1 year.

-Note this cheese is coated in lard during the aging process, making it unsuitable for vegetarians.
