From Edelweisse Creamery, Eiger Mountain is an extra, extra aged Emmentaler. This cheese is super special because there's nothing else quite like this being made in the US. The master cheesemakers use traditional Swiss techniques to produce these massive, 180 lb wheels. Some select wheels are chosen for extra aging, and these become the Eiger Mountain. The flavor is so complex, with tropical fruit notes that explode on the palate, with a crunchy, crystalline texture.
