This little beauty is a truly unique goat cheese based on the Corsican Fleur du Maquis. The texture is atypically smooth and silky for a goat. The rind is grown on top of a mix of field herbs and calendula which imparts a light herbal savoriness and plays beautifully off the natural mushroom flavors of the bloomy rind. We normally don’t like cheese with “stuff” on it, but with Julianna the herbs are more than just pretty window dressing, they are an ode to the fields in which the goats graze!
