A traditional AOC cheese from the heart of young goat cheese country in west-central France. St. Maure is beautiful to look at, a mini log with a crinkly, brainy geotrichium rind and very distinct cream line, the paste transitioning from silky to dense and fudge-like toward the center. The flavor is assertive but not overwhelming, tangy and bright goaty flavors are prominent with a grassy and lemony finish.
